Ingredients5 Spice Chicken Noodle Soup

  • 2-1/2 cups water
  • 1-1/4 cups low sodium chicken broth
  • 2 green onions, thinly bias-sliced
  • 2 teaspoons low sodium soy sauce
  • 2 garlic cloves, minced
  • 1/4 teaspoon five-spice powder
  • 1/8 teaspoon ground ginger
  • 2 cups bok choy, chopped
  • 1 medium red bell pepper, thinly sliced into strips
  • 2 ounces somen noodles, broken into 2-inch lengths, or 2 ounces dried fine noodles
  • 1-1/2 cups cooked chicken, chopped


  1. Combine the water, broth, onions, soy sauce, garlic, five-spice powder and ginger to a large saucepan.
  2. Bring the mixture to a boil.
  3. Add the bok choy, sweet peppers and noodles and stir to combine.
  4. Bring the mixture back to a boil, then reduce the heat.
  5. Continue boiling for 3 to 5 minutes, uncovered, or until the noodles are al dente.
  6. Add the chicken and heat to hot.
  7. 4 Servings
