Arizona Chicken Chili

IngredientsArizona Chicken Chili

  • 1 tablespoon oil
  • 1 pound boneless, skinless chicken breasts, cut into 1 inch chunks
  • 2 tablespoons of Santa Fe style spice blend (chili powder, cumin and garlic)
  • 1 (14 1/2 ounce) can diced tomatoes, do not drain
  • 1 (11 ounce) can whole kernel corn
  • 1 (14 1/2 ounce) can kidney beans


  1. Heat oil in large skillet
  2. Add chicken cubes. Cook for 5 to 6 minutes
  3. Stir in remaining ingredients; simmer, uncovered, 10 minutes
  4. Top with shredded cheddar cheese, if desired
