Arizona Mexican Tamale Pie

IngredientsArizona Mexican Tamale Pie

  • 3/4 pound ground beef or turkey
  • 1 cup chopped onion
  • 1 1/2 cup diced green bell pepper
  • 4 cloves garlic, minced
  • 2 teaspoons cumin
  • 1 can (15 ounce size) black beans
  • 1 can chipotle chilies en adobo
  • 1 can (8 ounce size) stewed tomatoes
  • 2 teaspoons adobo sauce (from chilies)
  • 4 ounces Cheddar cheese (grated)
  • 1/2 cup chopped fresh cilantro
  • 1 box cornbread mix (prepared into cornbread batter, set aside)


  1. Brown and sauté meat, onions, pepper and garlic on the stove in a large pot.
  2. Add cumin. Add beans, tomatoes and chilies, and adobo sauce.
  3. Sauté for 5 minutes. Remove from heat.
  4. Add cilantro.
  5. Pour into a glass baking (quart and a half approximately at least) pan.
  6. Pour the cornbread batter over the meat mixture.
  7. Bake for 20-22 minutes at 325 degrees F.
