Bacon Stuffed Jalapeños

IngredientsBacon Stuffed Jalapeños

  • 4 Slices cooked and crumbled Center cut bacon, set aside half of the bacon
  • 1 ounce low-fat cream cheese
  • 1/4 cup plain nonfat Greek yogurt
  • 2 tablespoons shredded extra sharp cheddar cheese
  • 2 tablespoons minced green onion
  • 1 small garlic clove, minced
  • 4 jalapeño peppers, halved lengthwise, seeded
  • Fresh cilantro, chopped, optional


  1. Combine half of the bacon, cream cheese, yogurt, cheddar cheese, green onions, and garlic in a bowl, stirring well to combine.
  2. Divide cheese mixture evenly among jalapeño pepper halves.
  3. Bake peppers on a foil lined baking sheet at 375°F. for 25 minutes or until cheese is bubbly and browned.
  4. Top each jalapeño half with remaining bacon bits.
  5. Sprinkle with fresh cilantro, optional
