Bacon Stuffed Mushrooms

  • 48 large Button Mushrooms
  • 8 ounces mozzarella cheese shredded (2 cups)
  • ½ lb. bacon (Turkey bacon can be used as a substitute if desired)
  • 4 Tablespoons butter or margarine


  1. Fry bacon to crispy and place on a paper towel to remove excess grease.  Dice bacon and set aside.Mushrooms Button Stuffed 2
  2. Wash 48 large button mushrooms making sure to remove any dirt.
  3. Remove stems from mushroom caps.  Dice steams then set aside and place caps onto a jelly roll pan.
  4. In a medium sized sauce pan melt butter then add diced stems, sauté until diced stems are fully cooked.
  5. Add diced bacon and mozzarella cheese stirring constantly until cheese is melted and diced stems and bacon are completely blended. 
  6. Preheat oven to 350⁰
  7. Using a household tablespoon fill mushroom caps generously with mozzarella, bacon and mushroom stem mixture.
  8. Fill bottom of jelly roll pan with ⅛” of water and place into the 350⁰ oven.  Bake for 15 to 20 minutes or until mushroom caps are completely cooked.  Move pan to the broiler for 30 to 60 seconds to brown up the cheese mixture.  WATCH and be careful because of extremely hot water on bottom of pan and because it goes from browned up to charred very quickly.
  9. Remove from oven and move to a serving dish and serve immediately.
