- 1⁄4 cup heavy cream
- Salt and pepper
- Lemon juice
- Bake unwashed beets at 400⁰ for 60 to 90 minutes.
- When beets are cool enough to handle remove skin and root
- Thinly slice skinned baked beets.
- Heat in saucepan or skillet with cream, add salt and pepper.
- Before serving add lemon juice.
