Baked Stuffed Pork Chops

IngredientsPork Chop Stuffing mix apples celery onion

  • 4 – 1 inch ribbed pork chops
  • ½ cup celery chopped
  • 2 tablespoons onion minced
  • 1 tablespoons margarine or butter
  • 1 cup unpeeled apple chopped
  • ¼ cup raisins
  • 1 cup dry bread crumbs
  • Dash of pepper
  • ¼ teaspoon sage
  • 1 teaspoon salt
  • ½ cup apple juice
  • Salt and pepper to taste

Directions

  1. Carefully cut pocket into each chop, wipe chops with moist towels; set aside.Pork Chop Stuffed Apple Celery Onion
  2. In a heavy skillet sauté celery and onion in margarine/butter for 8 minutes; remove from heat.  Add apple, raisins, bread crumbs and seasonings; toss with until completely mixed.
  3. Spoon mixture into pockets cut into chops.  Brown chops on both sides in skillet; place in 2 quart baking dish.  Sprinkle with apple juice and salt and pepper to taste.
  4. Bake covered, at 350⁰ for 1 ¼ hours or until tender
