Beef Stuffed Manicotti

IngredientsManicotti Beef Stuffed

  • 8 ounces ground beef
  • 1 ½ cups yellow onion, finely chopped
  • 1 package (10 ounces) chopped frozen spinach, thawed and squeezed dry
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil leaves
  • 1 large egg, lightly beaten
  • ⅔ cup grated Parmesan cheese
  • 8 ounces manicotti
  • 4 cups Medium White Sauce


  1. Heat a 12 inch skillet over moderately high heat.
  2. Add the beef and onion and saute for 5 minutes or until browned.
  3. Stir in the spinach, garlic, salt, pepper, oregano and basil, and cook, stirring frequently, for 3 minutes or until the liquid has evaporated.
  4. Remove from the heat, let stand for 10 minutes, then stir in the egg Preheat the oven to 375and 3 tablespoons of the Parmesan.
  5. Meanwhile, cook the manicotti according to package directions and make the White Sauce.  Stir into the sauce all but 1 tablespoon of the remaining Parmesan.  Stir 1 cup of the sauce into the meat mixture.
  6. Preheat the oven to 375⁰
  7. Lightly grease a 13 x 9 x 2 inch baking pan.
  8. Using a small spoon, stuff the manicotti with the meat mixture and arrange in a single layer in the pan.  Pour on the remaining sauce; sprinkle with the reserved Parmesan.  Cover with foil; bake for 30 minutes or until bubbly.  Uncover, turn the oven to broil and broil 4 inch from the heat for 5 minutes or until browned.
