IngredientsCHICKEN SALAD grapes oranges

  • 2 boneless skinless chicken breasts
  • Olive oil
  • Salt and pepper
  • 1 1/2 tsp. minced onion
  • 1 tbsp. lemon juice
  • 1/2 c. chopped celery
  • 1/2 c. seedless grapes
  • 5 tbsp. mayonnaise
  • 3/4 c. mandarin oranges
  • 1/4 c. almonds (roasted in butter)

Directions

  1. Coat chicken breasts with olive oil and lightly sprinkle with salt and pepper.
  2. Bake chicken in a 350⁰ F. oven for 45 minutes or until cooked completely
  3. Allow chicken to cool then chop breast into bite sized cubes.
  4. Combine cubed chicken, onion, lemon juice and celery.
  5. Let stand 2 hours.
  6. Add grapes, mayonnaise, oranges and almonds.
  7. Refrigerate for at least 1 hour before serving
