IngredientsClassic Shepherd's Pie

  • 4 large potatoes, peeled and cube
  • 1 Tbsp. butter
  • 1 onion, chopped finely
  • ½ cup shredded cheddar cheese
  • Salt and pepper to taste
  • 5 carrots, chopped
  • 1 Tbsp. vegetable oil
  • 1 lb. lean ground beef
  • 2 Tbsp. all-purpose flour
  • 1 Tbsp. ketchup
  • ¾ cup beef broth

  1. Bring a large pot of salted water to a boil. Add potatoes and cook 15 minutes or until tender but still firm. Drain and mash.  Add back to pan and add butter, 1 Tbsp. onion, and ¼ cup cheddar cheese.  Season with salt and pepper and set aside.
  2. Bring a large pot of salted water to a boil.  Add carrots and cook until tender but still firm.  Set aside.
  3. Preheat oven to 375 degrees F.
  4. In large skillet heat oil over medium heat.  Add remaining onion and sauté until aromatic and tender.  Add ground beef and cook until browned, pouring off any excess fat.  Stir in flour and cook 1 minute.
  5. Add ketchup and beef broth to skillet and bring to a simmer.  Simmer 5-10 minutes or until liquid has reduced.
  6. In greased casserole dish or pie dish, spread ground beef in an even layer.  Next spread a layer of carrots. Top with mashed potatoes and cheddar cheese.
  7. Bake for 20 minutes or until golden brown. Serve immediately.
