Classic Zucchini Bread

Classic Zucchini Bread


  • 1⁄2 cup vegetable oil
  • 3⁄4 cup honey
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1⁄2 cups zucchini, grated
  • 1⁄2 cup apple, grated
  • 1 1⁄2 cups flour
  • 1 teaspoon baking powder
  • 1⁄2 teaspoon baking powder
  • 1⁄4 teaspoon salt
  • 1⁄2 teaspoon cinnamon
  • 1⁄2 teaspoon nutmeg


  1. Preheat oven to 350.
  2. Grease a 5″x9″ loaf pan and dust with flour.  We use the 9″x5″ loaf pan from Anchor Hocking Click Here
  3. Beat oil, honey, eggs and vanilla in large bowl.
  4. Stir in apple and zucchini.
  5. In a separate bowl whisk together dry ingredients.
  6. Pour in loaf pan and bake large loaf for 60 minutes, mini loaves for 30 MI uses or until toothpick comes out clean.
  7. Cool in the pans for 15 minutes before removing to cool completely on a wire rack.  We used the Surpahs Stackable Cooling Racks Click Here
