Corn Jalapeño Fritters

IngredientsCorn Jalapeño Fritters

  • 2 large eggs, beaten
  • ¼ cup all-purpose flour
  • 2 tablespoons grated parmesan cheese
  • ½ teaspoon kosher salt
  • 2 cups fresh corn kernels, (frozen corn can be substituted for fresh)
  • 1 scallion, thinly sliced
  • ½ jalapeño pepper, seeded, finely chopped
  • 2 tablespoons canola oil, for frying
  • Sour cream
  • 1 lime cut into wedges


  1. In a food processor add eggs, flour, parmesan cheese and salt.  Pulse until completely combined.
  2. Add corn, scallions and jalapeño peppers pulsing several times until totally incorporated.  (Do not liquefy).
  3. Heat oil in a large nonstick skillet over medium heat.
  4. Place heaping tablespoon of batter into skillet and cook until golden brown, approximately 4 minutes per side.
  5. Season to taste with salt.
  6. Serve with dollop of sour cream and lime wedges.
