IngredientsCrab Cakes 2

  • 1 pound crab meat (blue lump or frozen snow crab).
  • 1 green pepper dices
  • 1 red pepper, diced
  • 1 small onion diced
  • ¼ stalk celery, diced
  • 2 whole eggs
  • 1 cup mayonnaise
  • ¼ cup Dijon mustard
  • 2 cups crushed saltine crackers
  • 1 tablespoon lemon juice
  • ¼ teaspoon Worcestershire Sauce
  • ¼ teaspoon Tabasco Sauce

Directions

  1. Combine all ingredients except crab.
  2. Fold in crab, if mixture seems dry add additional mayonnaise.
  3. Form patties, in a lightly oiled skillet sauté until browned and heated through.
  4. Preheat oven to 350⁰ F.
  5. Bake zucchini, peppers and carrot slices for 10⁰ minutes and use as a garnish for cakes.
