Crispy Onion Rings

Ingredientsonion rings 1

  • 2 medium sized Vidalia onions (cut into 1 ½ inch slices)
  • Canola or peanut oil for frying

For Dry Coating

  • ¼ cup cornstarch
  • ½ teaspoon baking powder
  • Pinch of salt
  • Generous pinch of Paprika or Cayenne

For Batter

  • ½ cup cornstarch
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • 2 tablespoons Old Bay Seasoning
  • 1 teaspoon Cayenne
  • Pinch of salt
  • ¼ cup pilsner or IPA
  • ¼ cup water
  • ½ cup vodka


  1. In a mixing bowl or a gallon sized plastic bag mix together the Dry Coating ingredients Cornstarch, baking powder, salt and either Cayenne or paprika and set aside.
  2. Separate your onion slices into rings and add to the Dry Coat mixture.  Coat the rings well, be sure to shake off any excess flour.
  3. In a separate mixing bowl whisk together all of the dry Batter ingredients, then add all of the wet ingredients, stirring to smooth out any lumps.
  4. Heat oil to 350⁰ F.
  5. When the oil is up to temperature, dredge the Dry Coated rings into the batter, letting any excess batter drip off.  Lay battered ring into the oil.
  6. Fry in batches to ensure even cooking.  Fry until golden brown on both sides.
  7. Remove to a paper towel lined tray, season lightly with salt and serve immediately.
