Crunchy Fried Walleye

IngredientsCrunchy Walleye

  • 1 egg
  • 1 cup evaporated milk
  • 2 cups cracker crumbs
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 ½ lbs. walleye or other lean fish fillets about ½ inch thick
  • 2 to 4 tablespoons vegetable or canola oil


  1. In a shallow dish or pie plate, blend egg and evaporated milk.
  2. On a plate or waxed paper, combine cracker crumbs, salt and pepper.
  3. Cut fish into serving-size pieces.
  4. Dip in egg – milk mixture.  Coat with cracker crumbs.
  5. In a heavy 9” skillet, heat oil.  Fry a few pieces at a time until golden brown, about 3 minutes; turn fish.  Fry other side until golden brown, 1 ½ to 3 minutes.  We use the Good Grips Fish Turner Click Here
  6. Drain on paper towels.  Keep warm in 175⁰ oven.  Repeat with remaining fish.
