Cucumber, Mango and Plum Salsa

  • 1 mango, chopped
  • 1 small cucumber, peeled, seeded and chopped
  • 2 large black plums, chopped
  • 3 tablespoons purple onion, chopped
  • 6 scallions, chopped
  • 2 jalapeno peppers, seeded and chopped
  • 8 tablespoons sweet red pepper, chopped
  • 8 tablespoons fresh cilantro, chopped
  • 2 fresh limes, juiced
  • 1 teaspoon kosher salt


  1. Place all ingredients in a large bowl and mix well.
  2. Chill salsa in refrigerator for 2 to 3 hours to allow flavors to meld
