Egg Salad & Egg Salad Sandwich

For the Salad

Salad Egg

  • 3 tablespoons low fat mayonnaise
  • 3 tablespoons low fat sour cream
  • ¾ teaspoon curry powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 large hard boiled eggs, coarsely chopped
  • 5 large hard cooked egg whites, coarsely chopped (reserve the yolks for another use)
  • ¼ cup finely chopped celery
  • ¼ cup finely chopped green onions, with tops
  • 3 tablespoons minced dill pickles

For the Sandwich

  • 2 slices whole grain bread
  • 2 teaspoons butter
  • Dash black pepper
  • 1/2 cup egg salad
  • 1 slice tomato
  • 1 lettuce leaf

  1. In a medium-sized bowl, whisk the mayonnaise, sour cream, curry powder, salt, and pepper.
  2. Fold in the remaining ingredients.
  3. Serve on curly lettuce leaves.  Can be used as ingredients for a great Egg Salad Sandwich

For the Sandwich

spread 2 slices of whole grain bread with butter and sprinkle lightly with black pepper.  Fill the sandwich with 1/2 cup Egg Salad, 1 slice of tomato and 1 lettuce leaf.
