Gingerbread Man Cookies

IngredientsGingerbread Man 2

  • 3 cups flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup (1 1/2 sticks) butter, softened
  • 1/4 cup firmly packed Brown sugar
  • 1/2 cup molasses
  • 1 egg
  • 1 teaspoon pure vanilla extract

Directions

  1. Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in large bowl. Set aside. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy.
  2. Add molasses, egg and vanilla; mix well.
  3. Gradually beat in flour mixture on low speed until well mixed.
  4. Press dough into a stick flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight.
  5. Roll out dough on lightly floured surface two 1/4 inch thickness. Using a gingerbread man cookie-cutter cut gingerbread man cookies and place 1 inch apart on ungreased baking sheets.
  6. Preheat oven to 350°F.
  7. Place baking sheets in oven and bake 8 to 10 minutes or until edges of cookies are beginning to brown.
  8. Cool on baking sheets 1 to 2 minutes. Remove to wire rack; cool completely.  We use the Surpahs 3 Tier Stainless Steel Cooling Racks Click Here
  9. Store cookies in airtight container up to 5 days.
