Glazed Strawberry-Rhubarb Pie

Ingredients:Pie Rhubard Strawberry filling

  • 1 1/4 cups Sugar
  • 1/8 teaspoon Salt
  • 1/3 cup Flour
  • 2 cups Fresh strawberries
  • 2 cups Fresh rhubarb, cut in 1″ pieces
  • 2 Tablespoons Butter or margarine
  • 1 Tablespoon Sugar
  • 1 Pastry for 2-crust pie

DirectionsPie Rhubard Strawberry

  1. Preheat oven to 425⁰ F.
  2. Combine 1 1/4 cup sugar, salt, and flour.
  3. Arrange half the strawberries and rhubarb in a pastry-lined 9 inch pie pan.
  4.  Sprinkle with half the sugar mixture.
  5.  Repeat with remaining fruit and sugar mixture. Dot with butter.
  6. Install top crust and flute edges to make high-standing rim.
  7. Brush top of pie with cold water and sprinkle on 1 tablespoon sugar.
  8. Cut steam vents in top crust.
  9. Bake in hot oven (425⁰ F) 40 to 50 minutes or until rhubarb is tender and crust is browned.

Use a Pie & Cake Marker to cut steam holes and help in cutting equal portions.

    nice easy recipe. comes out great every time. I add a little vanilla to the berries and use raw sugar instead of white. great pie!!
