Gluten Free Buttery “Ritz Type” Crackers

  • 6 tablespoons unsalted butter, divided
  • 1 cup all-purpose gluten free flour (if not using store bought gluten free four go to conversion chart) http://www.recipessquared.com/culinary-reference/gluten-free-conversion-chart/
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons sugar
  • ½ teaspoon sweet paprika (use smoked if possible, but if can’t be found don’t worry)
  • ½ teaspoon kosher or fine sea salt, divided
  • 1 tablespoon canola oil
  • ½ cup cold water, with ice (ice does not count in volume measurement)Gluten Free Crackers Butter Ritz Rolled Cut

Directions

  1. Preheat oven to 375⁰ F.  Line rimmed baking sheets with parchment paper and set aside.
  2. Chop 4 tablespoons of butter that is still cold from the refrigerator, and place in the freezer to chill.  Place the other 2 tablespoons of butter in a small bowl, and melt it in the microwave.  Allow it to cool while you make the cracker dough.
  3. In a large bowl combine flour, baking powder, sugar, paprika, and ¼ teaspoon of the salt.  Whisk to blend completely.
  4. Take the freezer cooled butter and cut it into the flour mixture using a pastry blender untilGluten Free Crackers Butter Ritz the mixture resembles small pebbles.  Stir in canola oil combining completely then add the water (discarding ice) a bit at a time stirring constantly until the dough begins to come together.
  5. Wrap the dough in plastic wrap, and place in the refrigerator to chill for about 10 minutes.
  6. Remove the dough from the refrigerator, place between to large sheets of plastic wrap, and roll out about ⅛ inch thick.
  7. Using whichever shaped cookie or biscuit cutter you like cut into shapes.  With a toothpick, poke 4 to 6 random holes in each cracker, to help them rise.
  8. Place evenly spaced on prepared baking sheets (crackers will not spread so do not leave much space between them), and place one sheet at a time in the center of the prepared oven.
  9. Bake until just beginning to brown, about 7 to 10 minutes, depending upon how large your crackers are.
  10. Remove from oven, brush with melted butter and sprinkle with remaining salt.
  11. Allow to cool completely before serving or storing.
