Gorgonzola and Toasted Walnut Salad

For SaladGorgonzola and Toasted Walnut Salad

  • 1 head radicchio, torn into bite sized pieces (4 cups)
  • 1 head Bibb lettuce, torn into bite-sized pieces (4 cups)
  • ½ cup crumbled Gorgonzola or Roquefort cheese (2 ounces)
  • ½ cup ½ inch pieces fresh chives

⅓ Cup coarsely chopped walnuts, toasted

For Toasted Walnut Dressing

  • ⅓ Cup olive or vegetable oil
  • ⅓ Cup coarsely chopped walnuts, toasted
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • ⅛ Teaspoon salt
  • Dash of pepper


For Salad

  1. Toss all salad ingredients to mix completely

For Toasted Walnut Dressing

  1. Place all ingredients in blender or food processor.
  2. Cover and blend on high speed about 1 minute or until smooth
  3. Dress salad and serve
