IngredientsItalian Strata

  • 1 ½ pounds Italian sausage
  • 1 pound zucchini, sliced
  • ½ pound fresh spinach, torn into bite sized pieces
  • 1 onion sliced
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 cups grated cheddar cheese
  • 2 cups grated Swiss cheese
  • 7 eggs
  • 10 slices of white bread, torn


  1. Cook sausage and drain.  Sauté’ zucchini, spinach and onion in sausage drippings.
  2. In a large bowl combine sausage, zucchini mixture, mustard, salt, pepper, cheeses, milk, eggs, and torn bread slices.  Mix well. Cover and refrigerate overnight.
  3. Preheat oven to 325⁰F.
  4. Mix ingredients again.  Place in a 9×13 inch baking pan.
  5. Bake for 1½ hours.
  6. Watch closely during last half hour as full baking time may not be necessary.
