Lamb Chops with Mint

IngredientsLamb Chops with Mint

  • 6 loin lamb chops with bone (4 ounces each), trimmed
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter or margarine
  • ¼ cup chopped green onions, with tops
  • ⅓ cup Chicken Stock or low-sodium chicken broth
  • 2 tablespoons balsamic or wine vinegar
  • 2 tablespoons fresh mint, chopped


  1. Preheat the grill or broiler.
  2. Sprinkle the lamb chops with salt and pepper.
  3. Grill directly over medium-hot coals, or broil 4 inches from the heat, for 4 to 5 minutes on each side for medium-rare or until the chops are the way you like them.
  4. Transfer to a serving platter and keep warm.
  5. In a small saucepan, heat the oil and butter over moderately high heat.  Add the green onions and sauté for 2 minutes or until tender.
  6. Add the stock and vinegar and simmer, uncovered, 2 minutes longer or until slightly thickened.
  7. Stir in 1 tablespoon of the mint, pour over the chops, and sprinkle with the remaining 1 tablespoon of mint.
