Lobster Stuffed Pasta Shells

IngredientsLobster in Pasta Shells

  • 1 (5 oz.) pkg. Giant pasta shells
  • 1 1/2 lb. S. African lobster tails or use frozen (canned)
  • 1/4 cup butter
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 clove garlic, chopped
  • 1 egg
  • 1 tsp. basil
  • Salt & pepper
  • 1 1/2 cup ricotta or cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cup spaghetti sauce
  • 1/4 cup melted butter
  • 1/2 cup dry bread crumbs

Directions

  1. Cook shells in boiling salted water. Drain and rinse with cold water.
  2. Chop lobster (small pieces) while partially frozen.
  3. Melt butter. Sauté celery, onion and garlic until tender. Add lobster.
  4. Sauté until white and opaque. Cool.
  5. Beat in egg, cottage cheese, Parmesan, salt and pepper.
  6. Stuff into drained and dried shells.
  7. Pour spaghetti sauce into greased shallow casserole.
  8. Place shells side by side in single layer in sauce.
  9. Combine butter and crumbs. Sprinkle over shells.
  10. Bake at 375 degrees for 30-35 minutes.
