Mississippi Tea Cakes

  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup buttermilk


  1. Preheat oven to 350⁰ F. Grease cookie sheets.
  2. In a medium bowl, cream together butter and sugar until smooth.
  3. Beat in egg and vanilla.
  4. Combine flour, baking powder, and baking soda; beat into the creamed mixture alternately with the buttermilk.
  5. Drop by rounded spoonful’s onto prepared cookie sheets.
  6. Bake for 8 to 10 minutes in preheated oven.
  7. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
