Orange-Almond Trout

IngredientsOrange Almond Trout

  • 1 lb. trout fillets, about ¾ inch thick
  • ¼ cup butter or margarine
  • ¼ cup sliced almonds
  • 1 medium onion, sliced
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • ⅛ Teaspoon black pepper
  • 2 oranges, peeled and sectioned


  1. If fish fillets are large, cut into 5 serving pieces.
  2. Melt butter in a 10 inch skillet over medium heat.  Coat fish with flour mixture.
  3. Cook almonds and onions in butter, stirring occasionally, until onion is tender.  Remove almonds and onion with slotted spoon; keep warm.
  4. Mix flour, salt, paprika and pepper.
  5. Cook fish in same skillet over medium heat 6 to 10 minutes, turning once, until fish is brown and flakes easily with fork.
  6. Top fish with almonds and onion.
  7. Garnish with orange sections.
