Oyster Dressing

IngredientsOyster Dressing

  • 4 sticks thick cut bacon, chopped
  • 2 cups chopped onion
  • 1 cup chopped celery
  • 1 cup chopped green Bell pepper
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh sage
  • 10 cups cubed day-old cornbread
  • 2 cups shucked raw oysters, drained
  • 2 cups low sodium chicken broth
  • 2 large eggs, beaten
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 teaspoons hot sauce
  • 1/4 teaspoon ground black pepper


  1. Preheat oven to 350°F.
  2. Spray a 2 quart baking dish with nonstick cooking spray.
  3. In a large skillet, cook bacon over medium heat until crisp. Let bacon drain on paper towels, reserving drippings in skillet.
  4. To skillet, add onion, celery, and bell pepper; cook, stirring occasionally, for 15 minutes or until tender.
  5. Stir in sage, and cook for 3 minutes.
  6. In a large bowl, stir together vegetable mixture, baking, cornbread, and all remaining ingredients.
  7. Spoon into prepared pan.
  8. Bake for 40 to 45 minutes or until Golden Brown

Makes eight servings
