  • Basic pizza dough
  • 1 1/3 cup store-bought tomato pizza sauce or pasta sauce
  • 8 ounces spinach, cooked, well drained and chopped
  • 1 teaspoon thyme leaves
  • 1/4 teaspoon freshly grated nutmeg
  • 8 ounce mozzarella cheese, grated
  • 4 eggs
  • 4 tablespoons grated Parmesan cheese


  1. Preheat the oven to 400°F. Lightly oiled 2 large baking sheets. Divide the dough into four equal portions. Roll each on a lightly floured work surface into and 8 inch round. Arrange 2 rounds on each sheet. Spread each with one third cup tomato sauce, leaving a 1 inch border
  2. Top each pizza with spinach, and sprinkle with the fine and not make. Sprinkle the mozzarella over top. Crack an egg in the center of each, and sprinkle with Parmesan.
  3. Bake for 20 – 25 minutes, until the edges of the dough are crisp and golden brown
