IngredientsRice Stuffed Rock Cornish Hens 2

  • 2 Rock Cornish Hens (about 1 ½ pounds each)
  • Salt
  • Pepper
  • 3 tablespoons butter or margarine, melted
  • 1 can 10 ¾ ounces condensed chicken broth
  • ¼ cup water
  • ½ cup raw regular rice
  • 1/3 cup shredded carrots
  • ¼ cup raisins
  • 2 tablespoons chopped parsley1/2 teaspoon onion powder
  • ½ teaspoon salt
  • 1 can 10 ½ ounces chicken gravy

Directions

  1. Preheat oven to 400⁰ F.
  2. Season cavity of hens with salt and pepper; chop giblets.

To make stuffing,

  1. In saucepan brown giblets in 1 tablespoon butter.
  2. Add broth, water, rice, carrots, raisins, parsley, onion powder, and ½ teaspoon salt.
  3. Bring to a boil, reduce heat.  Cover simmer 30 minutes or until done.
  4. Stir occasionally.
  5. Fill cavity of hens loosely with stuffing.
  6. Truss; place breast side up on rack in shallow roasting pan.
  7. Brush with the remaining butter.
  8. Roast 400⁰ for 1 hour 15 minutes.
  9. Remove hens to serving platter; keep warm.
  10. On top of range, in roasting pan, stir gravy into drippings.
  11. Heat stirring to loosen browned bits.
  12. Serve with hens and stuffing.
