Sherry-Glazed Roast Leg of Lamb

IngredientsLeg of Lamb

  • 1 (5 – 6 pound) leg of lamb
  • 1 clove garlic, slivered
  • 3 – 4 fresh mint sprigs, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon ground fine
  • 1 medium onion, cut into eighths
  • 1/3 cup dry Sherry
  • 1/3 cup minced or currant jelly

Directions

  1. Preheat oven to 325°
  2. Make several slits on outside of lamb, and insert garlic slivers.
  3. Combine mint, salt, pepper, and find; whereupon roast.
  4. Layer onion in a roasting pan; place roast on onions.
  5. Insert meat thermometer making sure it does not touch fat or bone.
  6. Bake at 325° for 2-2 1/2 hours.
  7. Combined Sherry and jelly.
  8. Glaze roast with Sherry mixture; bake an additional 30 minutes or until thermometer registers 160°. We use the Chef Remi Cooking Thermometer Click Here
  9.  Let stand 10 minutes before carving.
