- 1..…3 lb. Boneless Chuck roast
- 3..…Tablespoons Canola Oil
- 1..…Cup Water
Preheat oven to 350 degrees
Using a large skillet add 3 tablespoons of canola oil and place on burner at med high heat. Season Chuck roast with salt and pepper and place roast into skillet browning roast on all sides. Once browned move to a baking pan, add one cup of water, cover with aluminum foil, and place in 350 degree oven for 2 plus hours or until tender enough to pull apart with a fork. Allow to cool enough to be handled then shred entire roast.
While meat is cooling prepare BBQ Sauce.
- 1…….…..…Med Yellow Onion
- 2 Tbsps….Firmly packed brown sugar
- 2 tsps….…Dry Mustard
- 2 Tbsps.…Worchestershire Sauce
- 2 Tbsp……White Vinegar
- 1 Tsp………Liquid Smoke We use Colgin Natural Liquid Smoke
- 1……………14 0z. Bottle Ketchup
- 2 Tbsps…..Fresh Lemon Juice
- 1 Cup……..Water
Dice onion and place with above ingredients into a 2 quart pot. Simmer for at least 10 to 15 minutes on medium heat. Stir to make sure sauce does not burn. Fold in shredded beef making sure that beef is completely covered by sauce. Allow to marinate for 2 to 3 hours. Serve hot on a fresh Hamburger bun with a pickle spear, baked beans, and chips. Enjoy!
