Never fear. As long as you’ve got regular milk and anyone of the following items, Vinegar, Lemon juice, Cream of Tartar or Plain Yogurt you’re in business.
Whole milk seems to work best and will give a creamier texture, but if you’re looking for a lower fat buttermilk 2% or skim milk will work.
Take 1 cup of regular milk and add 1tbsn of either white vinegar, lemon juice or Cream of Tartar. If using plain yogurt add 2/3 cup of the yogurt to the cup of milk.
Ideally pour 1 cup of regular milk into a 4 cup measuring cup. Stir well making sure the ingredients are blended.
Allow the mixture to stand at room temperature for approximately 10 minutes and you should be good to go.
