Tropical Shrimp Salad

  • 1 1/2 pounds large cooked shrimp, set aside
  • 2 cups chopped pineapple
  • 1 ⅓ cups honeydew melon, cut into bite sized pieces
  • 1 ⅓ cups watermelon, cut into bite sized pieces
  • 1 ⅓ cups cantaloupe, cut into bite sized pieces
  • 1 cup peeled, seeded, and sliced cucumber
  • ¼ cup chopped green onionSalad Tropical Shrimp
  • ⅓ cup fat-free vanilla yogurt
  • 2 teaspoons lemon zest
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons light mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • Garnish: chopped green onion, celery leaves, fresh dill.


  1. In a large bowl, combine shrimp, pineapple, melons, cucumber, and green onion.
  2. In a small bowl, whisk together yogurt, lemon zest and juice, mayonnaise, honey, dill. Salt. And pepper.
  3. Add yogurt mixture to shrimp mixture, and stir to combine.
  4. Garnish with chopped green onion, celery leaves, and dill, if desired.
