Waldorf Rice Salad

IngredientsWaldorf Rice Salad

  • 2 cups red delicious apples, cored and diced, unpeeled
  • 1/4 cup pineapple juice or apple juice
  • 3 cups brown or white rice, cooked and cooled
  • 1 cup chopped celery
  • 1 cup chopped walnuts
  • 1/2 cup raisins
  • 1/4 cup shredded carrots
  • 3/4 cup vanilla or plain yogurt, low-fat
  • 3/4 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon


  1. In a mixing bowl, combine apples and juice.
  2. Add rice, celery, walnuts, raisins and carrots; stir to blend all ingredients.
  3. In a separate bowl, combine yogurt, mayonnaise, salt, and cinnamon; stir to blend.
  4. Stir mayonnaise mixture into apple mixture.
  5. Cover and refrigerate Waldorf salad until ready to serve.
